Freekeh (roasted green wheat) Allowed 2 cups

Ghee (samna baladi) Allowed 3 tbsp

Salt Allowed 1 tsp

Black pepper Allowed 0.5 tsp

Place the lamb in a pot, cover with water, add salt, cumin, and pepper.

Simmer for 60 minutes until tender. Reserve the broth.

Rinse the freekeh thoroughly, soak for 10 minutes, then drain.

Melt ghee in a pot, add freekeh and stir for 2 minutes, then pour in 4 cups of lamb broth.

Cover and simmer for 25 minutes until the freekeh is cooked through.

Serve the freekeh topped with the lamb and extra broth on the side.
