Boil-then-brown beef with rice

    Rinse the beef and place in a wide pot with water just covering it.

    Add salt, pepper, and cumin. Bring to a boil, then lower heat and cover.

    Simmer for 60–75 minutes until the meat is fully tender. Reserve the broth.

    Melt ghee in a skillet over medium heat and brown the beef on all sides.

    Cook the rice in 2½ cups of the reserved broth with a pinch of salt until done.
