Trotters in broth with rice

A traditional Egyptian dish the system explicitly endorses. Trotters slow-simmered until the gelatinous broth concentrates, served with white rice.

    Rinse the trotters thoroughly, briefly singe over an open flame to remove hair, then rinse again.

    Place in a large pot with water to fully cover and bring to a boil for 10 minutes.

    Discard the first water and refill with fresh water.

    Add salt, pepper, and cumin. Bring to a boil, then reduce heat.

    Slow-simmer for 3–4 hours until the meat is very tender and the broth is gelatinous.

    In the last 30 minutes, cook the rice in 2½ cups of the simmering broth with the ghee.

    Serve the trotters in a deep dish with the hot broth and a wedge of pickled lemon, with the hot rice on the side.
