Stuffed zucchini with minced meat

The system forbids raw zucchini but explicitly permits the stuffed preparation. Hollow long zucchini stuffed with rice and minced meat, simmered in tomato sauce.

    Rinse 10 small zucchinis and hollow each one with a vegetable corer, leaving a slightly thick wall.

    Rinse the rice and soak for 10 minutes.

    In a bowl, mix the drained rice with minced meat, salt, cumin, pepper, and a tablespoon of ghee.

    Stuff each zucchini three-quarters full, leaving space for the rice to expand.

    Grate the tomatoes for the sauce and melt the remaining ghee in a wide pot.

    Add the grated tomato with a pinch of salt and simmer for 5 minutes.

    Arrange the stuffed zucchini in the pot and add hot water to cover.
