Rinse the rice in water several times until the water runs clear, then drain.

Melt the ghee in a medium pot over medium heat.

Add ½ cup of vermicelli and stir until golden brown (about 3 minutes).

Add the drained rice and stir for one minute to coat.

Pour in 4 cups of boiling water, the salt, and the butter.

Bring to a boil, then reduce heat to the lowest setting and cover.

Cook for 18 minutes without stirring, then take off the heat and rest, covered, for 5 minutes before fluffing.
