Pickled lemon Limited 1 piece

Black pepper Allowed 0.5 tsp

Clean the liver and cut into small cubes. Season with salt, cumin, and pepper.

Cook the rice in the usual way with 2½ cups of water and salt.

Heat ghee in a skillet over high heat and add the liver cubes.

Sear for just 4–5 minutes to keep the inside tender.

Serve the liver over the rice with pickled lemon wedges.
