Pan-browned lamb liver with rice

Iron-rich lamb liver, quickly seared in ghee and finished with a squeeze of pickled lemon over rice.

    Clean the liver and cut into small cubes. Season with salt, cumin, and pepper.

    Cook the rice in the usual way with 2½ cups of water and salt.

    Heat ghee in a skillet over high heat and add the liver cubes.

    Sear for just 4–5 minutes to keep the inside tender.
