In a bowl, knead the minced meat with cumin, pepper, and salt until uniform.

Shape into long fingers, threading onto skewers or laying on a board.

Grill over coals or in a hot oven for 10–12 minutes, or pan-brown.

Cook the rice in 2½ cups of water or beef broth with ghee and salt.

Serve the kofta over the rice.
