Why is fresh lemon forbidden but pickled lemon permitted, when both are citrus?

The system bans whole fresh citrus (orange, lemon, lime) as standalone foods, but exempts pickled lemon in small amounts as a traditional "condiment" served alongside meals. Fermentation tones down acidity and shifts it — in the system's classification — from "fruit" to "meal companion."
Scientifically: fresh lemon is an excellent source of vitamin C and beneficial plant compounds, and its acidity doesn't "damage" a healthy stomach. Pickling preserves food but can reduce vitamin C and add sodium. Banning fresh lemon removes documented benefits with no medical justification.
Both are beneficial in a balanced diet. If you want citrus alternatives within the system, pomegranate and herbal drinks offer refreshing flavor without restriction.
